Last year I asked my sweet sister-in-love for a recipe of pumpkin cookies... and she delivered... it's my go to recipe in the fall, and of course I had to make a plate of them to take with me to our MOPS meeting today. I'm passing along the recipe, because I'm pretty sure EVERYONE needs to have it (a few have asked for it)... although, after you read what goes into them, you probably won't want to eat them anymore. enjoy friends...

Cookie Ingredients:
2 cups pumpkin (1 15 oz. can)
2 sticks margarine or butter
1 cup shortening
2 eggs
2 tsp cinnamon
4 tsp baking powder
1 1/2 tsp salt
2 tsp baking soda
4 cups flour
Mix together sugar, pumpkin, margarine, shortening, and eggs. Add cinnamon, baking powder, salt, baking soda, and flour. Drop rounded tablespoonfuls on baking sheet and bake at 350 for 10-12 minutes. After cookies cool, spread butter frosting on them. makes 3-4 dozen cookies (depending on the size of the cookie batter scoop)
Butter Frosting
1/3 cup margarine or butter
4 1/2 cup powdered sugar
1/4 cup milk
1 1/2 tsp vanilla extract
In a mixing bowl, beat butter until fluffy. Gradually add 2 cups of the powdered sugar, beating well. Slowly beat in the 1/4 cup milk and vanilla. Then slowly beat in remaining powdered sugar. if frosting is too thick, add a small amount of extra milk.
Yum! these look delicious! I'm a big pumpkin fan in the fall!

ReplyDeleteBut wouldn't they look so much better with a certain four-year-old admiring one, or "testing" the recipie? We have here a good picture that, with "the master of cuteness" might be an INCREDIBLE picture. Sorry, we can't get enough of the royal cuteness factor.
ReplyDeleteI love pumpkin! It's my very favorite flavor of the season! I am a huge fan of making pumpkin cookies, but I'll admit my recent addiction is an awesome pumpkin pie-esque creation that is crustless! It's so tasty and healthy! :) Your cookies look wonderful... and I just might need to make some to take to the family Thanksgiving this weekend!
