As promised, I have a yummy recipe to share with you today. The concept is the same as a "Jelly Roll", but instead of jelly, you'll be using whipped cream and strawberries.
Ingredients:
4 eggs, separated, plus 2 egg yolks
1/2 c. sugar
3/4 c. all purpose flour
1/2 tsp. baking powder
Directions:
Line a 13x9 inch cake pan with waxed paper and grease the paper well. Preheat oven to 425 degrees.
Beat the 6 egg yolks with half the sugar in a large bowl until pale and creamy, 5-10 minutes with an electric mixer. Beat the egg whites until frothy, slowly sprinkle in the remaining sugar and continue to beat until very stiff. Drop the egg whites onto the egg yolk mixture.
Sift the flour with the baking powder onto the egg whites and fold all into the yolk mixture, blending carefully with a metal spoon. Spread the batter evenly in the prepared cake pan. Bake for 10-12 minutes. Cake is done when a wooden pick inserted in center comes out clean.
Place a sheet of waxed paper on a damp cloth towel. Sprinkle the waxed paper with sugar. Turn out the cake onto the sugar-coated paper. Strip off the waxed lining paper and trim the edges of the cake. Place a sheet of clean waxed paper on top and carefully roll it up with the paper inside. Leave the cake until cold in the fridge, and carefully unroll it. Remove the waxed paper, and prepare to fill it...

Now to make the creamy filling... cut up about 2 cups worth of strawberries, and whip up some homemade whipping cream (heavy whipping cream, a little vanilla and sugar to taste)... put a bit of the whipped cream aside for the outside of the roll, and dump the rest in with the strawberries...
Mix the two, and then enjoy licking off the spoon of any "extra" you might have...
Your last step will be to spread the whipped cream/strawberries evenly across the dough, and then roll it up. Once rolled up, spread set aside whipped cream over entire roll, and decorate however you'd like.
You then have a scrumptious dessert to enjoy on a warm Spring/Summer night...
This is the cake that I request for my birthday over and over, year after year... and it was SO delicious to have one... it has been about 3 years since the last one, or maybe longer!

ReplyDeleteMmmmmmm! I make this beauty last night and we ate it in celebration of my FIL's birthday tonight. It was yummy! (I did replace the flour and baking powder with gluten free versions.) I'm planning to make it again Saturday to share at our Father's Day get together.
